Sunny Arugula Salad: An Eat Better™ Recipe


Arugula, also known as rocket, is an extremely nutritious, cruciferous vegetable. It’s rich in vitamins C, B, and K, as well as lutein, folate, chlorophyll and the anti-cancer compound sulforaphane. Some people even suggest that the plant is an aphrodisiac. No doubt we all feel a bit more stimulated when we are properly nourished!

Arugula has a distinctive peppery flavor that intensifies as the plant grows, so choose baby rocket if you prefer a milder taste. The measurements for this recipe are just a starting point; it’s more about the particular combination of flavors and textures that makes the salad so good. Too many nuts or too much oil will weigh things down, so go easy there. Try adding avocado or lean meat to make a meal.


  • 2 cups packed organic baby arugula
  • 1 cup sunflower sprouts, cut into bite-size lengths
  • 2 Tbsp. chopped raw walnuts
  • 1/4 of an apple, sliced as you like
  • Shaved sweet onion
  • Freshly ground pink salt (pepper isn’t needed)
  • Extra virgin olive oil
  • Balsamic syrup
  • Shaved Asiago cheese (optional)


Simply mix all ingredients in a large salad bowl. Drizzle with olive oil and balsamic syrup. Add shaved Asiago cheese if desired. Enjoy!
